做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
