做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
