做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
