做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉(ròu )片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
