做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖(gài )上(shàng )锅盖焖。
