做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅(guō )盖大火(huǒ )煮开后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
