做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮开后(hòu )转中火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
