做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖(gài )大(dà )火煮开(kāi )后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
