做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右(yòu )。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
