做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入(rù )生姜(jiāng )、春(chūn )笋、牛肉(ròu )片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
